I have two favorite parts of knifemaking. One is the quench step where the red hot blade gets plunged into the oil, putting off coils of smoke and sometimes a bit of flame. The second is when you first start grinding the finish edge on, after tempering, and the black scale comes off to reveal the shiny steel beneath.
